The folds or plicae in the jejunum are much smaller and lower than the blunt types found in the duodenum. The Brunner glands disappear after the duodenum. Paneth cells appear at the bottom of the crypts. The Brunner glands produce alkaline mucus with bicarbonate to neutralize the acidic chyme of the stomach, and to optimize the further enzymatic degradation of food. They also secrete urogastrone which inhibits chief cells and parietal cells in the stomach. Paneth cells produce a variety of antimicrobial peptides (defensins) in the intestine. They affect the composition of the intestinal microbiota.
